How to make it

In a skillet, sauté 1/2 cup green pepper with the celery in butter until tender but not brown. Stir in flour, salt and pepper. Add milk all at once. Cook and stir until bubbly.  Add half the cheese, the carrots and pimento and stir until cheese is melted. Combine the potatoes and cheese sauce in a 13”x9”x2” baking dish and bake at 375° for 30 minutes. Sprinkle remaining cheese on top and bake an additional 5 minutes. Garnish with remaining green pepper.

  • 3/4 cup chopped celery

  • 3/4 cup chopped green pepper

  • 1/3 cup butter 

  • 1/3 cup flour

  • 1/2 tsp. salt

  • 1/8 tsp. black pepper

  • 3 cups milk

  • 3/4 cup shredded American cheese

  • 3/4 cup coarsely shredded carrot

  • 1/3 cup chopped pimento

  • 32 ounce package frozen French fries
